Gnocchi made with iron
Ingredients: Water, flour, salt
Preparation: It is a first course, whose name comes from its preparation with a stick of umbrella. Prepare a dough of flour, water and salt. When it is solid enough, cut little cilinders 2 cm. long. Put flour on an umbrella's iron stick; roll the stick on the cilinder to make it as a rolled sheet. Then boil the "gnocchi" in salt water and flavour them with tomato soup and mushrooms.
Ingredients: spaghetti, ricotta, sugar, cinnamon
Spaghetti with ricotta
Preparation (two portions): mix 200 gr. of ricotta, two spoons of sugar and one of cinnamon, then prepare a creamy dough. Boil spaghetti in salt water then drip them and put the dough on.
Ingredients: flour, olive oil, sheep's milk cheese, salt
Sutrine
Preparation: Make a dough of flour, salt, water; oil a frying pan, when it is hot, put a tea-spoon of dough in it; turn the "sutrina" to fry it on each side. Put it on a plate, flavour it with cheese (or marmalade if you like it sweet) roll it and serve it hot.
